I literally cannot do more

I started my journey 18 months ago going from completely sedentary to 5 spin classes and 3 lifting sessions a week. I have a history of disordered eating so I've been religious about recording calories in and out but don't mess with restriction diets since they can be a massive trigger for me. I focus on plant based, non refined foods and stay between 1500-1900 calories a day. I also fast around 15-16 hours a day. After getting metabolic testing I found that my RMR is is 20% lower than it should be for my weight and activity level. (38f, 275lbs, 6 feet tall)

Over these 18 months I have lost two dress sizes, gained muscle definition, and have created incredible endurance levels. However. I've lost a total of only 15 pounds, my cholesterol is UP, my body fat percentage has only reduced by 4%, and I feel like I'm just broken. I don't understand how I can log and restrict calories, practice intermittent fasting, and exercise 8 times a week and lose under a pound A MONTH. I've come so far in changing my life with recovery from my ED and reversing my sedentary nature but it just feels like my body refuses to change. Even my bloodwork isn't cooperating.

I honestly don't know what to do anymore.
