26F, 280lbs, 5'5" (with an ideal weight of 130lbs) with disabilities (chronic pain from joint instability, arthritis, degenerative disc disease) that makes physical activity difficult to impossible. I need to reverse non-alcoholic fatty liver and insulin resistance/high A1C/prediabetes. Mostly sedentary lifestyle if you do not include me walking around all day at work.
What do you eat when you are thinking of going carb free/low carb or sugar free (and limiting bad fat & sodium), especially if you love and always crave pasta, chicken wings, breads, potato chips, corn dogs, burritos, pizza/hot pockets, juice, and all the high carb, starchy and convenient junk food?
I would like to gather ideas for meals (including creative things I can do with vegetables so they're not so bland or "yucky"), especially as I work 8 hours a day in a store with a 1 hour lunch break (no driver's license, can't drive home). What do you do when you have texture/sensory problems with fruits and vegetables? How to make them more interesting/tasty/appealing?
