Water Retention

I am really bad at drinking water. I barely drank it while I've been doing these high intensity classes and I could tell I had some water retention.

Now, my physical therapist has advised me to stop these classes due to back problems, so I can work with him on exercises. Well, it's been a month since I stopped these classes and my weight has already gone up again. I've also been drinking a TON more water (40-60 ounces a day), and I'm experiencing more bloating? My diet is fine, I've actually been doing no sugar for this month. But still my stomach is way more bloated than before.

Because I never drank water and now I'm drinking a lot of it, would it be causing my body to retain more? Thanks for any information.
