Help, I am stuck in a vicious cycle

Hello, I have been trying to lose weight since I was 18, in 25 now, and have only gained weight, I’ve tried and tried and tried, multiple times every year. I’ve done Keto, vegetarian, CICO, trying to be mindful of what I eat, ect.....and I start off so good, maybe a week, maybe two and then I crash. Honestly I have been wondering if I’m a legitimate food addict, or if I just don’t really “””want it””” bad enough. Because I do, more than almost anything else, I want to not be this big, I’m currently fluctuating at 310-305, and have been going to the gym every couple of days and trying to not eat as much or as bad, and now I’ve hit my wall again. How do I get back on track, and keep myself from getting derailed yet again? I see so many of y’all on here and I’m so proud of y’all, I just need a little help to not get knocked off course for another 6 months and then I’m looking at the scale and instead of losing weight, I gained 25 pounds. I have my fitness pal and have been trying to use it more, but something always pops up, and I eat a cheat meal and then spiral out of control, so anything helps, maybe even just letting me vent on here. Thank y’all.

Tldr: how the hell do I get dedicated and consistent enough to see the fight thru
