Looking for Guidance on Burning Fat and Gaining Muscle

In December 2019, I weighed 255lbs. At the time I was 17 years old and my height was/still is 5'11 (180cm). I was tired of being fat but still wasn't ready to accept the lifestyle change so I did the keto diet because it seemed easiest for me. I lost 40lbs in like 3-4 months. I got sick of keto so I stopped dieting and just ate normal for the most part and maintained my weight. Recently, I've started to try and lose weight again to finish this off. I'm 189 right now and I have very little muscle. I'd say I am maybe 30% bodyfat, not sure to be honest. I want to gain muscle slowly but also lose maybe 20-30lbs of fat. I'll provide pictures down below of my body currently.

I would like to lose the weight relatively quickly, but as safe as possible. I do not want saggy or loose skin if possible. The only problem with all of this is, I have no idea where to start. I have been walking/running outside once a day to get my body in the groove of working out and I usually eat one or two meals a day. Lunch will usually be like a plain ham and cheese sandwich and then for dinner I'll have whatever my mom makes, or fast food. I drink a good amount of water as well. I am going to stop eating out or getting fast food and focus on at-home food.

I'm looking for guidance on how to eat at a caloric deficit while burning fat and while slowly gaining muscle mass. I am open to going to the gym, but I'm afraid because I don't know what the fuck I would do there lol. Losing the fat is more important than gaining muscle right now, my self-confidence is rather shit and if I slim down, it would really help. Muscle comes second tho but it will eventually be a priority. Thanks in advance for anyone willing to help, you guys are what makes Reddit such a great place.
