Adding veg to meals also adds a lot of excess water. Help?

Hey guys!

Quick heathy cooking/ volume eating question here. If I’m posting in the wrong place, feel free to correct me.

As the title says, I’ve been bulking up meals with veggies, but sadly, it is making my meals super watery.

I love veggies, they’re filling and add nutritious bulk. I can eat a whole plate of just veg, but my partner is not such a huge fan. To make us both happy, I modified a lot of our favorite meals. For example- I throw a ton of bell peppers and mushrooms in stir fry, zucchini and yellow squash in pasta, or cucumber to tuna salad.

It’s super delicious but I can’t seem to get around this issue. I notice it even more if the meal sits out for a while and we come back to it later.

Is there a trick to preventing this? Besides just pouring off the excess water afterwards.. my partner and I would enjoy my healthy meals a lot more if I could solve this!
