Quicker Results Help?

Hello

During quarantine I let things kind of get out of control and I gained a lot of weight back that I really focused on losing. Right now I fluctuate between 260 and 270, but my target weight is 200 pounds. I can’t remember the last time I weighed under 230, but I would love to be around 200.

I maintain a diet of mostly protein and little carbs netting around 1200 calories a day. I usually eat around 1700 and weight lift/peleton to burn about 500. I would run more if I could, but I tore my ACL a long time ago and my knees are that of a 90 year old man.

I’ve started to plateau and I feel like I can’t get below 260. I’ve been at this for about four weeks and I’ve lost 8 pounds on what I’m doing. Is this normal? I feel like I should be losing more.

I’m starting to think that I am losing fat and building muscle, but is there a way to check that? Should I be measuring my waist more? Or am I doing everything right and this is just a really slow process?

Any help would be greatly appreciated, thank you.
