Losing with Fasting not working? Frustration!

Hi guys, I'm super demotivated. 4 years ago I started CICO while being 250pounds. I lost 50pounds in a year and I was super happy about it - and Christmas time around I gained back some pounds because I binged. After that, slowly but steadily I've come back to 250 pounds. I knew I had to stop, but I just couldn't find back into CICO. I felt drained, exhausted and the counting is so tedious that I just couldn't do it anymore. Now I thought: At 250 pounds and 1,73 meters I've a calorie need of approximately 2500 the day. This means, if I do intermittent fasting - meaning, I fast from "going to bed" till next day "going to bed" (meaning: I stop eating monday when I go to bed, then I don't eat all of tuesday, and start eating wednesday morning). This should be approximately a calorie deficit of 2500 at least the day I didn't eat. So assuming I eat normal, meaning no sweet stuff, no deserts etc., there is no way that I am eating more than lets say 3000 cal. I am not weighing and not counting, but I know the calorie monsters and I know what is dangerous. Nonetheless, all this should lead, if done 3 days of fasting, to a deficit of 7500 or more. Even if I overeat 5 days with 500 cal, I am still at a deficit of 5000cal. How is it then possible, that while not having binged at all, having been conscious about my diet, that after a week of doing this, I gained 3 pounds??? I'm super frustrated. Is this not working as I expected it? Am I doing to much math? I can't make myself count the calories I eat on the non-fast days, because that's the whole reason I do fast.
