Need advice on keeping weight off

I'm 29M. I have a very stressful job as a resident doctor and work long hours. Through a combination of med school, internship, and residency, I went from around 180lbs to 260. I finally decided enough was enough in July and started doing something about it.

Since then, I've gone from 260lbs in July to about 213lbs yesterday through a combination of vigorous hiking and lower calorie intake. My long-term goal was always to get under 209lbs to be non-obese (by BMI, at least). My next goal is to get to 190lbs.

My wife says I restrict my calories too much (~1500kcal daily whether I hike or not). I generally eat a 400kcal breakfast, then fast until dinner for 800kcal, then a 300kcal or so halotop. Hiking is generally minimum of 3 hours, max around 10.

I am worried about regaining the weight once I do increase my kcal intake. I want to start lifting when I hit around 190.

Does anyone have advice on how to not bounce back to my former weight going into the future?
