I have heard (haven't we all?) about how amazing the "Mediterranean diet" is. But uh.
I decided to look up plant-based recipes to try bulking out my diet with more veggies so I felt fuller. I usually pick recipes that use similar ingredients for the week to buy in bulk and save, so I made Greek food for the past week and OH MY GOD.
I am SO SATISFIED and under my calories easily every single day. How did I not know how amazing Greek food was before this!? I feel like I always assumed it was greek salad and idk, lamb -- but I was missing the boat.
I weighed the ingredients (not a lot of room for error with things like feta and olive oil), and everyone?! HUGE portions are like 400-600 calories. I can have a big, filling dinner with like 10 different types of veggies, some fish, and a little pasta and I'm as satisfied as I used to feel before being in a deficit.
It was all pretty easy to make, too!? Baked cod with roasted peppers and kalamata olives, spanakorizo but with orzo and peas, roasted feta and vegetables, baked shrimp and tomatoes, chicken with olives and veggies. I am in HEAVEN.
In closing: Greek food = amazing. If you have good Greek recipes I am begging you to share.
