Realistically I probably need to go back to tracking calories but I hate it so much

I've (F29, CW 128kg/282 lbs, 171cm/5"6) been working out and trying to change my eating habits for about 18 months. I know I have made some changes because I've seen the changes in how I look and how my clothes fit. However, the scale refuses to budge. I avoid weighing myself because it is so upsetting to see all the hard work I've put in and the scale hardly budge.

If I'm being honest with myself, I'm still probably eating too much and I should go back to tracking calories. I tracked calories on and off for a few years but I find it really hard on my mental health. I've gone through a lot of changes since I last tried (went on anxiety meds, bought my own house etc) so maybe I will have better luck this time.

Anyone have any advice on how to track and protect yourself mentally?
