Struggling to get out of the diet mentality and thinking about food constantly

Stats: F18 5'5 180 - 130 lbs

I recently started into maintenance after hitting my goal weight. I'm really struggling to get out of the deficit mentality tho. I'm trying to slowly up my calories (1300 currently) week by week, yet I still struggle to eat that much and end up with deficits of 700-1000 calories bc somehow my brain hasn't really understood that I don't really need a deficit anymore. I have to see how that progresses in the next few weeks.

But additionally, I constantly think about food. I think about what I can eat my next meal, when it will be, what I will eat in a week, what i can eat when I go out for food, etc. How can I stop this? What are some action steps I can take? I love food, and I'm not looking to not care about it anymore at all. But I would like for it to take up less of my brain space. I'm getting better at listening to my body for when I'm hungry, but I still think about food constantly. Any tips?
