GOING MAD not losing any weight

Hi all, Wondered if anyone had any theories. I lost a lot of weight a couple of years ago (50lbs) but have gained some back due to life stress and lockdown. Back on the calorie deficit train and have been for four weeks. I lost 1kg two weeks... then nothing. I’ve stuck to it rigorously, I’m exercising more, tracking everything down to the sprays of oil. I’m 5’3, female, now 78.5kg . I aim for 1,200 cals, I cycle every day and according to my Fitbit generally burn 2300 cals per day (If I do a load of exercise I might go up to 1450 cals to survive, but still under on Fitbit). Where am I going wrong? I’m hydrated, exercising, eating less? Could it be my body holding on to water because I’m exercising more?!
